A warm and comforting dish for Iftar! Chorba is a flavorful and nourishing soup, perfect to break your fast during Ramadan. Made with tender meat, vegetables, and aromatic spices, this Algerian-style soup is a must-have for your Ramadan table.
Ingredients:
- 300g lamb or beef, cut into small cubes
- 1 finely chopped onion
- 2 tomatoes, grated
- 2 tablespoons tomato paste
- 1 carrot, diced
- 1 zucchini, diced
- 1 handful of chickpeas (pre-soaked)
- 1/2 cup vermicelli or small pasta (like orzo)
- 1 liter of water or broth
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon cumin
- Salt & pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro & parsley, chopped
- Lemon wedges for serving
Instructions:
1. In a large pot, heat olive oil and sauté the chopped onion until soft.
2. Add the meat cubes and brown them slightly.
3. Stir in the grated tomatoes, tomato paste, and spices. Cook for a few minutes until fragrant.
4. Add the diced carrot, zucchini, and chickpeas. Pour in the water or broth and bring to a boil.
5. Reduce the heat and let simmer for about 45 minutes, stirring occasionally.
6. Add the vermicelli (or orzo) and cook for another 10 minutes until tender.
7. Sprinkle with fresh cilantro and parsley before serving.
Serve hot with a squeeze of lemon for extra flavor!
